Filet Mignon

Ingredients

  • 1 filet mignon steak
  • (1 oz) Olive oil
  • (80 g) Olive oil
  • (80 g) Mashed potatoes
  • (50 g) Sour cream
  • (20 g) Butter
  • (50 g) Sweet pepper
  • (10 g) Black Olive
  • (25 g) Bacon
  • (25 g) Eggpant
  • (5 g)  Parmesan
  • (2 oz) Red wine
  • (1 oz) Red wine vinegar
  • Salt and pepper to taste
  • (50 g) Leeks
  • (.05 g) Thyme
  • (.05 g) Garlic

 *Prep Time: 30 minutes*

1 – Preheat oven to 180 degrees C to cook the filet mignon steak

2 – Smashed potatoes: Place potatoes and water to cover in a large saucepan; bring to a boil. Reduce heat; cook, uncovered, until tender, 10-15 minutes. Add butter, salt and pepper to taste

3 – For the wine reduction sauce: pour in a pan 50 g of sugar and 20 oz of red wine and bring to a simmer

4 – Cut the sweet pepper and the eggplant and put in in a pan. Add olive oil, parmesan cheese, salt and pepper to taste. Serve and enjoy!
