We know that you love enchiladas, they are one of the most traditional Mexican dishes. But, what if I told you that La Concha Restaurant located at El Cid El Moro Beach Hotel in Mazatlán offers a different version of traditional dish, Seafood Enchiladas. You must try them on you next visit to our hotel, you will love them! Or if you prefer, you can make them yourself at home and share with all of your friends and family. Here is the recipe.
-For the enchiladas-
*Ingredients for one serving (3 enchiladas)*
- (60 g) Shrimp – peeled, deveined and coarsely chopped
- (60 g) Fish
- (60 g) Clams
- (20 g) Finely chopped parsley
- (20 g) Tomato
- Salt and pepper to taste
- (200 g) Chopped onion
- (30 g) Finely chopped garlic
- (2 oz) Manchego cheese
- (3) Flour tortillas
- (1 oz) White wine
- (1) Small fresh thyme
- (2 oz) Sour cream
- (50 g) Butter
-For the fruit tartare-
*Preparation: mix all the following ingredients*
- (50 g) Finely chopped papaya
- (50 g) Finely chopped pineapple
- (50 g) Finely chopped red apple
- (3) Basil leaves
- (3) Mint leaves
- Salt and pepper
- Juice of two lemons
- (½ spoon) Raspberry vinegar
Let’s Do This
*Prep Time: 30 minutes*
1 – Preheat oven to 350 degrees F (175 degrees C).
2 – In a large skillet, sauté shrimp for 2 minutes. Add the fish, clams, finely chopped garlic, white wine, salt and pepper; cook and mix all the ingredients for another 2 minutes. Remove from heat. Add 2 oz of sour cream and fresh thyme.
3 – Add two table spoons full of the seafood mixture into each tortilla, roll-up the tortillas and place them in a 9×13 inch baking dish. Pour over the sauce mix and add cheese.
4 -Bake in preheated oven for 5 minutes. Sprinkle finely chopped parsley and tomato over the enchiladas, and add on the side a scoop of the fruit tartare. Voila it’s done, enjoy!
